As I have already mentioned I really hate cooking and I’m not very good at it but I’m also trying to eat more nutritious food and depend less on microwave meals.
This is a post to quickly share easier recipes I find for vegan meals because there’s no bigger deterrent to cooking for beginners than all the recipes having like 17 ingredients or more.

Savoury Vegan Recipes
Savoury Vegan vegetable muffins – 4 main ingredients
After sorting through multiple recipes with a million ingredients I found this muffin recipe by Ela Vegan which excluding seasonings is only really 4 ingredients – silken tofu, chickpea powder, baking powder and loads of vegetables.
It has recommended seasoning in the recipe but I didn’t have half of it so I just dumped in extra nutritional yeast, pepper and some mustard and they were delicious. Worst-case scenario I’m sure you could get away with whatever you have on hand.

Banana and blueberry vegan pancakes – 7 Ingredients
I used to make a similar recipe from ‘The healthy chef’ when I was vegetarian but I couldn’t find it to modify. However instead I found this excellent easy alternative by Elephantastic Vegan for making Banana and Blueberry Vegan Pancakes with only 7 ingredients.
I actually didn’t have the right oil so I just used Nuttalex instead (though I wouldn’t recommend it was much harder to whisk it smooth than oil would have been).
